It has also a bigger fat concentration that determines its sweeter and more aromatic flavor. Iberico de Bellota is without any doubt the best ham in the world. Like Jamon Iberico, it is made from the best free range of Spanish native black pigs in Spanish called Pata Negra specimens. But in the Bellota case, these are fatted for the last 3-4 months of its life only with acorn (bellota).
